Ingredients
  

  • 1 large Onion chopped
  • 2 cloves Garlic chopped
  • 4 cups Mushrooms sliced
  • Salt to taste
  • Black Pepper to taste
  • 2 1/4 cups Vegetable Stock or chicken stock
  • 1 cup Farro 8 ounces
  • Fresh Parsley for garnish

Instructions
 

  • In a medium pot bring 2 1/4 cups chicken or vegetable stock to boil, then add in 8 ounces of farro.
  • Cover and simmer for 30 minutes.
  • In a large soup pot sauté onions, garlic, mushrooms, salt and pepper until golden brown.
  • Once farro has absorbed almost all of the liquid (30 minutes) add your mushrooms/onions, and toss.
  • Serve topped with a sprinkle of fresh parsley.
