Farro Risotto is a savory and satisfying dinner or side dish. This healthy grain is a must-have for your whole grain diet.

- 1 large Onion chopped
- 2 cloves Garlic chopped
- 4 cups Mushrooms sliced
- Salt to taste
- Black Pepper to taste
- 2 1/4 cups Vegetable Stock or chicken stock
- 1 cup Farro 8 ounces
- Fresh Parsley for garnish
In a medium pot bring 2 1/4 cups chicken or vegetable stock to boil, then add in 8 ounces of farro.
Cover and simmer for 30 minutes.
In a large soup pot sauté onions, garlic, mushrooms, salt and pepper until golden brown.
Once farro has absorbed almost all of the liquid (30 minutes) add your mushrooms/onions, and toss.
Serve topped with a sprinkle of fresh parsley.
