This Easy Gluten Free Pumpkin Spice Cake is such a sweet treat! It doesn't matter if it's fall or not, let's get baking.

- 2 Egg
- 1/2 cup Corn Oil or Oil of Choice
- 1/2 15-ounce can Pumpkin Puree
- 3/4 cup Granulated Sugar
- 1 cup All-Purpose Gluten Free Flour (I used King Arthur's)
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 1 teaspoon Cinnamon
- 1/2 teaspoon Ground Ginger
- 1/4 teaspoon Cardamom
Line a 9x9 inch baking tray with parchment paper and give it a quick spray of oil.
Preheat oven to 350°F.
Add pumpkin puree, eggs and oil to a bowl and whisk together well.
Add in the flour, sugar, baking powder, baking soda, salt, ginger, cardamom and cinnamon and mix well
Pour batter into parchment lined baking tray and bake at 350°F for 25-30 minutes.
Remove cake from oven and let cool completely.
Enjoy with cinnamon spiked whipped cream or your favorite buttercream frosting.
