Country fried potatoes make a great basis for a tasty breakfast or brunch. Here's how to prepare them.

- 6 medium Potato red or white, cooked and chilled
- 4 tablespoons Vegetable Oil or shortening
- 1 pinch of Salt to taste
- 1 pinch of Freshly Ground Black Pepper to taste
Dice the cooked potatoes and set them aside.
Heat a heavy skillet over a medium heat and pour in the oil or shortening.
Once the oil is hot, add the diced potatoes, ensuring they are in a single layer.
Do not stir or turn them and cook until golden brown on one side.
Turn them and brown them on the other side.
Season with salt and pepper to taste, then serve whilst hot.
