Country fried potatoes make a great basis for a tasty breakfast or brunch. Here's how to prepare them.

Ingredients
  

  • 6 medium Potato red or white, cooked and chilled
  • 4 tablespoons Vegetable Oil or shortening
  • 1 pinch of Salt to taste
  • 1 pinch of Freshly Ground Black Pepper to taste

Instructions
 

  • Dice the cooked potatoes and set them aside.
  • Heat a heavy skillet over a medium heat and pour in the oil or shortening.
  • Once the oil is hot, add the diced potatoes, ensuring they are in a single layer.
  • Do not stir or turn them and cook until golden brown on one side.
  • Turn them and brown them on the other side.
  • Season with salt and pepper to taste, then serve whilst hot.
