Ingredients
  

  • 1/2 cup Unsalted Butter Softened
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • 1/8 teaspoon Nutmeg
  • 1 1/2 cups Old Fashioned Rolled Oats
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1/2 cup Fresh Cranberries Roughly chopped
  • 1/2 cup Cinnamon Chips

Instructions
 

  • Preheat oven to 350°F and line a baking sheet with parchment paper
  • In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars until smooth.
  • Beat in the egg and vanilla until creamy. Add the cinnamon and nutmeg and mix.
  • Pour in the oats, flour, salt, and baking soda, and mix until just combined.
  • Fold in the cranberries and cinnamon chips.
  • Using a small cookie scoop, drop the dough onto prepared baking sheet at least 2 inches apart. Bake for 12-15 minutes, until cooked through. Rest for 2-3 minutes before transferring to a cooling rack. Enjoy!
