Preheat oven to 350°F and line a baking sheet with parchment paper
In the bowl of a stand mixer, fitted with the paddle attachment, cream together the butter and sugars until smooth.
Beat in the egg and vanilla until creamy. Add the cinnamon and nutmeg and mix.
Pour in the oats, flour, salt, and baking soda, and mix until just combined.
Fold in the cranberries and cinnamon chips.
Using a small cookie scoop, drop the dough onto prepared baking sheet at least 2 inches apart. Bake for 12-15 minutes, until cooked through. Rest for 2-3 minutes before transferring to a cooling rack. Enjoy!
