Chow Chow Relish is a southern condiment full of summer vegetables. Great with just about everything!

Ingredients
  

  • 1/3 cup Cider Vinegar
  • 1/4 cup Granulated Sugar
  • 1 1/4 teaspoons Salt
  • 1/2 teaspoon Dried Dill
  • 1/2 teaspoon Celery Seed
  • pinch of Crushed Red Pepper Or more to taste
  • 1 medium Zucchini Squash Chopped, about 3 cups
  • 2 cups Fresh Corn White or yellow, frozen can also be used
  • 1 large Red Bell Pepper Seeded and chopped

Instructions
 

  • Mix together vinegar, sugar, salt, dill, celery seed and red pepper in a large sauté pan. Heat on medium high and bring to a boil.
  • Add zucchini, corn and red pepper. Mix well. Reduce heat to medium and cook for 7 to 10 minutes or until vegetables are tender.
  • Cool and refrigerate in jars. This can be eaten right away but tastes great after it has been refrigerated overnight.
