Chow Chow Relish Recipe

Chow Chow Relish is a southern condiment full of summer vegetables. Great with just about everything!

- 1/3 cup Cider Vinegar
- 1/4 cup Granulated Sugar
- 1 1/4 teaspoons Salt
- 1/2 teaspoon Dried Dill
- 1/2 teaspoon Celery Seed
- pinch of Crushed Red Pepper Or more to taste
- 1 medium Zucchini Squash Chopped, about 3 cups
- 2 cups Fresh Corn White or yellow, frozen can also be used
- 1 large Red Bell Pepper Seeded and chopped
Mix together vinegar, sugar, salt, dill, celery seed and red pepper in a large sauté pan. Heat on medium high and bring to a boil.
Add zucchini, corn and red pepper. Mix well. Reduce heat to medium and cook for 7 to 10 minutes or until vegetables are tender.
Cool and refrigerate in jars. This can be eaten right away but tastes great after it has been refrigerated overnight.
