Chocolate Peanut Butter Shortbread Bars make for a fabulous dessert. Sweet, salty, and incredibly addicting!

Ingredients
  

  • 2/3 cup Butter softened
  • 1/4 cup Granulated Sugar
  • 1 1/4 cups All-Purpose Flour
  • 1 cup Peanut Butter
  • 1 cup Powdered Sugar
  • 1/4 teaspoon Salt
  • 1 1/2 cups Milk Chocolate Chips
  • 1/2 teaspoon Kosher Salt or Fleur de Sel for sprinkling on top

Instructions
 

  • For the Shortbread:
  • Preheat the oven to 350°F.
  • In the bowl of a stand mixer, beat together the butter, sugar and flour until crumbly.
  • Press into a 9x9 baking dish and bake for 20 minutes.
  • Cool completely before adding the peanut butter layer.
  • To make the peanut butter layer:
  • In the bowl of a stand mixer, beat together the peanut butter, powdered sugar, and salt until well combined. Press on to the shortbread crust.
  • To make the chocolate topping:
  • In a medium microwave safe bowl, microwave the chocolate chips on low power until melted, stirring every 30 seconds. Spread the melted chocolate over the peanut butter mixture and sprinkle with a bit of salt, if desired.
  • Let bars set for at least 1 hour before slicing and serving.
