Ingredients

  • 5 cups Stale Ciabatta Cubed
  • 2 1/2 cups Whole Milk
  • 3 large Egg
  • 1/2 cup Dark Brown Sugar Packed
  • 2 tablespoons Bourbon
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 cup Semisweet Chocolate Chips
  • Whipped Cream or Ice Cream For serving

Instructions

  • Generously spray the inside bottom and sides of a 9x9 baking dish. Place the bread in the baking dish in an even a layer as possible. Set aside.
  • In a large bowl, beat the milk, eggs, sugar, bourbon, vanilla, salt, and cinnamon until smooth and frothy.
  • Pour the mixture carefully over the bread so it all absorbs into the bread.
  • Press the bread down with a wooden spoon to encourage it to absorb the sauce. Cover the pan with plastic wrap and let it soak for 4 hours, or up to 8.
  • Preheat the oven to 350°F. Scatter the chocolate chips on top of the bread pudding.
  • Bake it for 35 to 40 minutes, or until it is golden brown on top and the casserole is puffed up nice and high.
  • Remove from the oven and allow to cool for 10 minutes.
  • Serve warm with whipped cream or ice cream.
