- 5 cups Stale Ciabatta Cubed
- 2 1/2 cups Whole Milk
- 3 large Egg
- 1/2 cup Dark Brown Sugar Packed
- 2 tablespoons Bourbon
- 1 teaspoon Pure Vanilla Extract
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Ground Cinnamon
- 1/2 cup Semisweet Chocolate Chips
- Whipped Cream or Ice Cream For serving
Generously spray the inside bottom and sides of a 9x9 baking dish. Place the bread in the baking dish in an even a layer as possible. Set aside.
In a large bowl, beat the milk, eggs, sugar, bourbon, vanilla, salt, and cinnamon until smooth and frothy.
Pour the mixture carefully over the bread so it all absorbs into the bread.
Press the bread down with a wooden spoon to encourage it to absorb the sauce. Cover the pan with plastic wrap and let it soak for 4 hours, or up to 8.
Preheat the oven to 350°F. Scatter the chocolate chips on top of the bread pudding.
Bake it for 35 to 40 minutes, or until it is golden brown on top and the casserole is puffed up nice and high.
Remove from the oven and allow to cool for 10 minutes.
Serve warm with whipped cream or ice cream.
