These chocolate chip banana oatmeal bars are so quick and easy to make, taste great, and make the perfect snack. Yet they're still healthy enough for breakfast!

Ingredients
  

  • 1 cup Old Fashioned Rolled Oats
  • 3/4 cup Oat Flour
  • 3/4 cup Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Salt
  • 1/4 cup Brown Sugar lightly packed
  • 3 Banana mashed
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 cup Buttermilk
  • 1/2-3/4 cup Semisweet Chocolate Chips (or raisins)

Instructions
 

  • Preheat the oven to 350°F.
  • Line an 8x8 inch baking dish with parchment paper or aluminum foil, spray it with non-stick cooking spray, and set aside.
  • In a large bowl, whisk together the oats, oat flour, whole wheat flour, baking soda, cinnamon, salt, and brown sugar.
  • Add the mashed bananas, vanilla, and buttermilk and stir well.
  • Fold in the chocolate chips.
  • Spread the batter into the prepared baking dish.
  • Bake for 28-32 minutes, or until a toothpick inserted in the center comes out clean, and the bars are golden brown.
  • Allow the bars to cool completely in the pan, then lift out the parchment paper and slice into bars.

Notes

  • Store the bars in an airtight container at room temperature for up to 5 days.
