Instructions
Preheat the oven to 350°F. Lightly grease a 13 X 9 baking pan.
Add the oats to a small bowl. Pour the boiling water over the oats, stir and set aside.
In a large bowl, beat together the eggs, bananas, sugar, oil, and vanilla.
Dump in the flour, cocoa, baking soda, and kosher salt. Mix until JUST combined.
Stir in the oats and pour the batter into the prepared pan.
Bake for 20-25 minutes, or until a pick inserted into the center comes out clean. Let the bars cool before frosting.
To make the frosting, beat together the cream cheese and butter until it's nice and fluffy. Add in the powdered sugar 1 cup at a time, mixing well after each addition. Mix in the vanilla and milk or cream, and beat until fluffy. Frost the cooled chocolate banana oat bars.
