Preheat oven and cook puff pastry shells according to directions on package.
While pastry shells cook, whisk together cocoa powder and powdered sugar, set aside.
In mixer add whipping cream. Whip until medium peaks.
Slowly add in cocoa/sugar mix. Continue to whip until stiff peaks form. Set aside.
When pastry shells are done, allow to cool for 3 minutes. Add an amaretti cookie into the center of each shell, reserving two cookies to crush for garnish.
Completely cool.
Pipe in mousse into the center of each shell.
Sprinkle with crushed cookie.
Serve and enjoy! Store in refrigerator for up to 1 week.
