- 1 1/2 pounds Chicken Tenders
- 1 cup Dill Pickle Juice
- 2 Eggs
- 3 tablespoons Water
- 3/4 cup Self-Rising Corn Meal Mix
- 3/4 cup Italian breadcrumbs
- Salt and Pepper
- 1 cup Vegetable Oil
- 4 Hamburger Bun
- 1 Tomato Sliced into 4 slices
- 4 slices Monterrey Jack Cheese
- 8 Sandwich Pickle Slice
Combine chicken juice and chicken in a large zip top bag. Allow chicken to marinate for at least 1 hour and up to 8 hours.
In a bowl, whisk together eggs and water.
In a separate bowl, combine cornmeal mix and bread crumbs.
In oil in a large skillet. Remove chicken from bag and discard marinade.
Sprinkle chicken with salt and pepper. Soak chicken in eggs and then dredge in cornmeal mixture.
Cook chicken in hot oil for 2-3 minutes per side or until golden. Remove to a paper towel covered plate to drain.
To assemble sandwiches, heat broiler. Place two tenders on the bottom of each bun. Top with cheese.
Broil for 1-2 minutes or until cheese has melted. Top with tomatoes and pickles before serving.
