Ingredients
  

  • 1 1/2 pounds Chicken Tenders
  • 1 cup Dill Pickle Juice
  • 2 Eggs
  • 3 tablespoons Water
  • 3/4 cup Self-Rising Corn Meal Mix
  • 3/4 cup Italian breadcrumbs
  • Salt and Pepper
  • 1 cup Vegetable Oil
  • 4 Hamburger Bun
  • 1 Tomato Sliced into 4 slices
  • 4 slices Monterrey Jack Cheese
  • 8 Sandwich Pickle Slice

Instructions
 

  • Combine chicken juice and chicken in a large zip top bag. Allow chicken to marinate for at least 1 hour and up to 8 hours.
  • In a bowl, whisk together eggs and water.
  • In a separate bowl, combine cornmeal mix and bread crumbs.
  • In oil in a large skillet. Remove chicken from bag and discard marinade.
  • Sprinkle chicken with salt and pepper. Soak chicken in eggs and then dredge in cornmeal mixture.
  • Cook chicken in hot oil for 2-3 minutes per side or until golden. Remove to a paper towel covered plate to drain.
  • To assemble sandwiches, heat broiler. Place two tenders on the bottom of each bun. Top with cheese.
  • Broil for 1-2 minutes or until cheese has melted. Top with tomatoes and pickles before serving.
