Bucatini with Tomatoes is a simple supper you won't be able to resist. Talk about an easy weeknight meal!

Ingredients
  

  • 12 ounces Bucatini Pasta
  • 1/2 Onion chopped
  • 3 tablespoons Olive Oil
  • 4 ounces Pancetta
  • 3 Roma Tomato chopped
  • 2 Green Onions chopped
  • 2 sprigs Fresh Thyme
  • Salt and Pepper to taste
  • 1 cup Heavy Cream

Instructions
 

  • In a large pot of boiling salted water cook bucatini according to package. Reserve 2 tablespoons water then drain, return pasta to pot.
  • While it cooks add olive oil and onion to large sauté pan. Cook for 3 minutes or until onions are softened.
  • Add pancetta cook for 5 minutes, continue to stir. Add in tomatoes, green onions, thyme, salt and pepper. Stir.
  • Slowly stir in heavy cream.
  • Pour sauce over pasta and toss. Add in reserved water and continue to toss until pasta is well coated.
  • Serve immediately and ENJOY!
