Bucatini with Tomatoes Recipe

Bucatini with Tomatoes is a simple supper you won't be able to resist. Talk about an easy weeknight meal!

- 12 ounces Bucatini Pasta
- 1/2 Onion chopped
- 3 tablespoons Olive Oil
- 4 ounces Pancetta
- 3 Roma Tomato chopped
- 2 Green Onions chopped
- 2 sprigs Fresh Thyme
- Salt and Pepper to taste
- 1 cup Heavy Cream
In a large pot of boiling salted water cook bucatini according to package. Reserve 2 tablespoons water then drain, return pasta to pot.
While it cooks add olive oil and onion to large sauté pan. Cook for 3 minutes or until onions are softened.
Add pancetta cook for 5 minutes, continue to stir. Add in tomatoes, green onions, thyme, salt and pepper. Stir.
Slowly stir in heavy cream.
Pour sauce over pasta and toss. Add in reserved water and continue to toss until pasta is well coated.
Serve immediately and ENJOY!
