Ingredients
  

  • 1/2 cup Unsalted Butter Cold and cut into 1/2 inch pieces (8 tablespoons)
  • 1/4 cup Granulated Sugar
  • 1 cup Unbleached All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1 cup Blackberry Jam
  • 1 ounce Bourbon
  • 12 ounces Fresh Blackberries
  • 2 tablespoons Granulated Sugar
  • Confectioners Sugar For dusting

Instructions
 

  • Heat your oven to 350°F. Grease and line a 9x9 inch square baking pan with parchment paper.
  • In the bowl of your food processor combine the butter, sugar, flour and salt. Pulse 8-10 times until the dough resembles coarse sand.
  • Dump the dough into your prepared baking pan and press firmly into the pan and the corners creating an even layer.
  • Bake for 12-15 minutes or until the edges start to turn a light golden brown.
  • In a small bowl whisk together the blackberry jam and bourbon and top the crust with the jam.
  • Arrange the blackberries in a single layer on top of the jam and sprinkle the sugar on top.
  • Place back in the oven and bake for another 20 minutes.
  • Remove from the oven and let cool completely before removing from the pan.
  • Dust the top with confectioners’ sugar and cut into 8 triangles.
  • The bars can be cut into smaller squares or triangles to serve a larger crowd if desired.
  • Bars are best served the day they are prepared.
