Ingredients
  

  • 1 cup All-Purpose Flour
  • 3/4 cup Granulated Sugar divided
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 Egg
  • 1/4 cup Oil
  • 1/2 cup Sour Cream
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 cup Blueberry Preserves
  • 6 tablespoons Butter melted
  • 4 teaspoons Cinnamon

Instructions
 

  • Preheat the oven to 400°F. Spray 2 – 12 count mini muffin tins with nonstick spray.
  • Stir together the flour, 1/2 cup sugar, baking powder, baking soda, and salt.
  • Create a well in the center and add the egg, oil, sour cream, and vanilla. Mix together gently.
  • Spoon one teaspoon batter into the bottom of the prepared muffin tins.
  • Place a small spoonful of the blueberry preserves in the center of the batter.
  • Use the remaining batter to cover the preserves.
  • Bake for 10 minutes.
  • Let cool in the pans for 2 minutes before gently removing them and placing them on a wire rack to cool completely.
  • Stir together the remaining sugar and cinnamon.
  • Dip the donut holes in the melted butter and roll in the sugar mixture. Let set.
