Ingredients

  • 1/2 tablespoon Unsalted Butter
  • 1 1/2 cups Fresh Blueberries or frozen blueberries
  • 3 tablespoons Honey (OR 2 tablespoons brown sugar), plus a little more to drizzle over the finished oatmeal
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • pinch of Salt
  • 2 cups Water
  • 1 cup Old Fashioned Oats (use certified gluten free oats to make this recipe gluten free)
  • dash of Salt
  • 1/4 cup Cream or milk

Instructions

  • In a medium saucepan, melt the butter over medium high heat.
  • Add the blueberries, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the blueberries are softened. (see note)
  • Pour in the water to a boil and then reduce the heat to simmer. Gently stir in the oats. If the water starts to bubble over, reduce the heat even further. Cook for about 4 minutes, stirring occasionally.
  • Stir in the dash of salt, and scrape the oatmeal into two bowls. Stir in the cream and serve warm.

Notes

  • If you use FRESH blueberries, reduce the initial cook time to just 1 minute before adding the water.
