Blueberries and Cream Oatmeal is hearty, delicious, and homemade! You can use fresh or frozen blueberries for this recipe that comes together in just 10 minutes!
3tablespoonsHoney(OR 2 tablespoons brown sugar), plus a little more to drizzle over the finished oatmeal
1teaspoonCinnamon
1/4teaspoonGround Ginger
1/4teaspoonGround Nutmeg
pinch ofSalt
2cupsWater
1cupOld Fashioned Oats(use certified gluten free oats to make this recipe gluten free)
dash ofSalt
1/4cupCreamor milk
Instructions
In a medium saucepan, melt the butter over medium high heat.
Add the blueberries, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the blueberries are softened. (see note)
Pour in the water to a boil and then reduce the heat to simmer. Gently stir in the oats. If the water starts to bubble over, reduce the heat even further. Cook for about 4 minutes, stirring occasionally.
Stir in the dash of salt, and scrape the oatmeal into two bowls. Stir in the cream and serve warm.
Notes
If you use FRESH blueberries, reduce the initial cook time to just 1 minute before adding the water.
