Ingredients
  

  • 3 cups Yellow Onion chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Fresh Thyme or 1/2 tsp dried
  • 3/10 cup Worcestershire Sauce
  • 3/4 cup Chicken Stock
  • 1 1/2 teaspoons Tomato Paste
  • 5 pounds Ground Turkey Breast
  • 1 1/2 cups Dry Bread Crumbs
  • 3 Extra Large Egg beaten
  • 3/4 cup Ketchup

Instructions
 

  • Preheat oven to 325 degrees F.
  • Warm the olive oil over a medium to low heat in a medium saute pan.
  • Add the onions, olive oil, salt, pepper, and thyme and cook gently for around 15 minutes, until translucent, but not browned.
  • Add the Worcestershire sauce, chicken stock, and tomato paste and mix well.
  • Set aside and allow the mixture to cool to room temperature.
  • In a large bowl, mix the ground turkey, bread crumbs and eggs with the onion mixture.
  • Using your hands, shape into a rectangular loaf on an ungreased sheet pan.
  • Evenly spread on the ketchup topping.
  • To stop the top from cracking, place a pan of hot water in the oven under the meatloaf.
  • Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through.
  • Delicious served hot, at room temperature, or cold in a sandwich.
