Almond Joy Energy Balls are a great snack that's healthy and delicious. And it's got chocolate!

Ingredients
  

  • 6 ounces Dates
  • 2/3 cup Almonds
  • 1 cup Unsweetened Shredded Coconut
  • 2/3 cup Semisweet Chocolate Chips Or dark chocolate chips

Instructions
 

  • Soak the dates in hot water for 10 minutes to soften them. Drain and place in the bowl of a food processor. Add the almonds, coconut, and chocolate chips and process until well combined. The mixture will come together into a ball — this takes 2-3 minutes.
  • Form the mixture into small, one tablespoon sized balls and place on wax paper. Chill for at least one hour to firm up before enjoying. Store in an airtight container in the fridge.
