Vegan Pancakes Recipe

Ingredients

  • 1 tablespoon Ground Flax Seed
  • 3 tablespoons Boiling Water
  • 1 cup All-Purpose Flour, or whole wheat flour
  • 3/4 cup Almond Milk
  • 1 tablespoon Granulated Sugar
  • 2 tablespoons Vegetable Oil
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Pure Vanilla Extract
  • 1 tablespoon Lemon Juice

Directions

  1. Soak the ground flax seed in the water in a small bowl. Set aside.
  2. Whisk together the flour, sugar, baking powder, and salt.
  3. Add the almond milk, vegetable oil, vanilla extract, lemon juice, and flax seed/water solution. Whisk together until smooth.
  4. Heat a griddle to medium high heat. Spray lightly with non stick cooking spray.
  5. Spoon 1/4 cup batter onto griddle for each pancake. Cook pancakes on first side until edges appear dry, flip and cook for 1-2 minutes on the other side. Serve immediately.
