Strawberry Mints Recipe

Ingredients

  • 1/2 cup Unsalted Butter, softened
  • 1/2 teaspoon Mint Extract
  • 1/3 cup Light Corn Syrup
  • 3 3/4 cups Powdered Sugar
  • 3 tablespoons Strawberry Gelatin

Directions

  1. In a large mixing bowl, blend all the ingredients together until fully combined. The dough will be very crumbly.
  2. Once you pinch a small amount in your hand, roll it until it comes together. You can make any size mints you like. I use about 2 teaspoons of dough, roll it into a ball, then place it on a piece of parchment paper. Flatten each ball with the tines of a fork.
  3. Allow the mints to sit for a while to become firm. After about 3 hours I put them in a bowl on my counter and leave them uncovered (until they are completely devoured). I prefer them to get more firm as the days (hours) go by! However, if you like, my grandma prefers to refrigerated them in a covered container after letting them sit for 3 hours. You decide how YOU like them! ENJOY!
