Rigatoni with Sausage Recipe

Ingredients

  • 16 ounces Dried Rigatoni Pasta
  • 1 tablespoon Olive Oil
  • 1 pound Hot Italian Turkey Sausage
  • 1 tablespoon Garlic, chopped
  • 1 pint Grape Tomatoes, halved
  • 1 tablespoon Dried Basil
  • 4 ounces Dry White Wine, or chicken broth
  • 6 ounces Baby Spinach, chopped
  • Salt and Pepper, to taste
  • Grated Parmesan Cheese, for serving

Directions

  1. Boil pasta in a large pot of water according to package directions. Drain and keep warm.
  2. In the meantime, heat olive oil on medium high heat and cook sausage for about 5 to 7 minutes or until no longer pink.  Add garlic, tomatoes, and dried basil.  Cook for 5 minutes or until tomatoes are wilted.
  3. Stir in wine or broth and bring to a simmer. Add spinach and cooked pasta to the pan. Cook for another few minutes or until sauce is thickened.
  4. Add salt and pepper to taste. Serve with grated cheese if desired.
