- 3 pounds Fresh Pumpkin, (Pie or Sugar)
- 2 tablespoons Olive Oil
- 17 ounces Potato Gnocchi, (1 package)
- 6 tablespoons Butter
- 8 leaves ofs Fresh Sage
Preheat oven to 400°F.
Cut pumpkin in half. Clean out seeds and pulp with a large spoon. Cut pumpkin in slices and place on a baking sheet. Sprinkle with olive oil. Bake for 15-20 minutes or until tender.
When pumpkin is done remove from oven and cool. When cooled remove skin and dice up. Set aside.
Cook gnocchi according to package.
While it cooks add butter to saute pan. Melt until golden brown, about 3 minutes.
Add sage. Continue to cook butter for an additional minute.
Add cooked pumpkin and gnocchi. Stir.
Serve warm and ENJOY!
