- 1/2 Mango, Fresh, diced
- 12 sprig ofs Mint, Plus extra for garnish
- juice from half a Lime
- 1/2 ounce Simple Syrup, 1:1 ratio of sugar and water
- 1 1/2 ounces White Rum
- Club Soda
- Ice Cubes
In a cocktail shaker place the diced mango and mint and muddle until the mango is fully broken up.
Add the lime juice, and simple syrup and rum – stir to combine.
Fill a highball or Collins glass with ice, pour the mojito over and top with club soda.
Garnish with a sprig of mint.
