Ingredients

For the Lavender Sugar:
  • 1 tablespoon Lavender Flower Buds
  • 1 cup Granulated Sugar
For the Biscuits:
  • 2 cups Self Rising Flour
  • 1 1/2 tablespoons Lavender Sugar
  • 4 tablespoons Unsalted Butter, frozen
  • 1/2 cup Heavy Cream, plus one tablespoon
  • Lavender Flower Buds, for decorating if desired

Directions

For the Lavender Sugar:

  1. In a food processor, pulse together lavender flowers and sugar for two minutes. Store in an airtight container.

For the Biscuits:

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. Sift together flour and sugar.
  3. Grate frozen butter, and stir into flour.
  4. Stir in 1/2 cup cream until a dough forms that just comes together but is neither dry or too sticky.
  5. Dump dough out onto a wooden board and knead about 10 times by bringing dough together and folding in half, then repeating.
  6. Pat into a 3/4-inch oval and cut out biscuits using a 2-inch cutter. Place biscuits on baking sheet.
  7. Brush with remaining cream, and sprinkle on lavender buds.
  8. Bake for 10 minutes, until golden brown. Serve immediately with the best butter or strawberry jam.
