Kale and Sweet Potato Pizza Recipe

Ingredients

  • 1 No-Knead Pizza Dough
  • 1 tablespoon Extra Virgin Olive Oil
  • 1 tablespoon Unsalted Butter
  • 2 cups Sweet Potato, diced, small
  • 1 Leek, cut into thin strips
  • 4 cups Kale
  • Kosher Salt
  • Black Pepper
  • 4 ounces Gouda Cheese, shredded

Directions

  1. Preheat the oven to 475°F. Spread the pizza dough out onto a piece of parchment paper (or a lightly greased baking sheet) and let it rest while preparing the vegetables.
  2. Heat the olive oil and butter in a skillet over medium heat.
  3. Add the sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until tender.
  4. Add the leeks to the pan and cook for an additional minute or two, until they are slightly soft.
  5. Add the kale, and continue to cook just until the kale has wilted. It should only take a minute.
  6. Season the vegetable mixture to taste with salt and pepper.
  7. Spread the vegetables over the pizza crust. Sprinkle with the shredded cheese.
  8. Bake the pizza directly on a pizza stone (or on the baking sheet) for 12 - 14 minutes, until the crust is golden and the cheese is bubbly.
  9. Serve immediately.

Notes

  • Baby kale is becoming more popular these days. You might find it with the bagged lettuces in the produce department at your local grocery store. If you have trouble finding it, feel free to use regular kale.
  • Just remove the tough stems and give it a good chop! And, if you don't have gouda cheese on hand, sharp cheddar would work beautifully in this recipe, too. Don't stress yourself out trying to find ingredients… This is supposed to be an easy dinner!
