Gluten Free Spinach Artichoke Chicken Recipe

  • 6 thighs Boneless Skinless Chicken Thighs
  • 2 cups Shredded Mozzarella Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Grated Parmesan Cheese
  • 1/4 teaspoon Black Pepper
  • 3 cloves Garlic, crushed
  • 1 can Artichoke Hearts, drained and chopped, 14 ounces
  • 8 ounces Cream Cheese, softened
  • 1 cup Chopped Spinach


  1. Preheat oven to 400°F.
  2. Place the chicken in a greased 9x13 baking dish.
  3. Combine the remaining ingredients in a large mixing bowl and mix well to combine. This is easiest done with a stand mixer.
  4. Once the dip is formed, evenly spread it on top of the chicken.
  5. Bake in the oven for 60 minutes or until the chicken is at least 165*.
  6. Serve with the dip baked right on top.
