Gluten Free Mini Meatloaf Recipe

For the Meatloaf:
  • 2 Eggs, beaten
  • 2 cups Certified Gluten Free Oats, or quick cooking oats (will not be gluten-free if oats are not certified)
  • 1/2 cup Evaporated Milk
  • 1/2 cup Chopped Onion
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 2 pounds Lean Ground Beef
For the Sauce:
  • 2 cups Ketchup
  • 1 1/2 cups Brown Sugar, packed
  • 1/2 cup Chopped Onion
  • 1 teaspoon Liquid Smoke
  • 1/2 teaspoon Garlic Powder


  1. Preheat the oven to 400°F.
  2. In a large bowl combine the meatloaf ingredients.
  3. Spray a 9x13-baking dish or a mini meatloaf pan with non-stick cooking spray.
  4. Shape small portions of the meat mixture into small loaves and place in the pan about 2 inches apart.
  5. Bake for 30 minutes at 400°F.

For the Sauce:

  1. Carefully remove the dish from the oven, drain if needed.
  2. In a small saucepan, bring all sauce ingredients to a boil.
  3. Pour over the meatloaf.
  4. Return to the oven for an additional 30 minutes or until cooked all the way through.
