    12 Servings

Ingredients

  • 12 ounces Fresh Cranberries
  • 2 jalapeños Jalapeños, minced
  • 3 Thinly Sliced Scallions
  • 1/4 cup Chopped Cilantro
  • 3/4 cup Granulated Sugar
  • 1/4 teaspoon Kosher Salt
  • 2 tablespoons Orange Zest
  • 1/4 cup Fresh Orange Juice, plus more as needed
  • 2 8 ounce packages Cream Cheese, softened

Directions

  1. Use a food processor and pulse to chop the fresh cranberries. Alternately chop them with a knife, but a food processor makes quick work.
  2. Add chopped cranberries, cilantro, scallions, jalapeño peppers, orange zest, sugar and salt to a mixing bowl. Mix well to combine.
  3. Cover the cranberry mixture and refrigerate for at least 4 hours or overnight.
  4. Remove the cranberry mixture from the refrigerator and strain through a fine mesh sieve until the excess liquid has drained completely.
  5. Reserve the excess liquid and set aside.
  6. Add cranberry mixture to a mixing bowl with the softened cream cheese and orange juice.
  7. Mix well to combine, adding a tablespoon or two of reserved liquid at a time until the desired consistency is achieved.
