Avocado Banana Bread Recipe

Ingredients

For the Bread:
  • 1 cup All-Purpose Flour
  • 1 cup Whole Wheat Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 Avocado, Smashed
  • 4 small Bananas
  • 2/3 cup Granulated Sugar
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 1/2 cup Skim Milk
  • 2 tablespoons Cinnamon Chips
  • 2 tablespoons Chocolate Chips, Bittersweet
For the Topping:
  • 1/2 cup Old Fashioned Oats
  • 2 tablespoons Agave Nectar

Directions

  1. Preheat oven to 375°F.
  2. Mix flour, baking powder, and salt in a medium bowl, set aside.
  3. Beat together avocado, bananas, sugars and vanilla.
  4. Add 1/3 of the dry to the wet, alternate with milk until everything is lightly folded together.
  5. Fold in chips before spooning into a greased 8.5” loaf pan.
  6. Bake at 375°F for 45 minutes, then drop temperature to 350°F and continue baking an additional 45 minute, or until tester comes out clean.
