Ann Romney Welsh Cakes Recipe

Ingredients

  • 3 1/2 cups All-Purpose Flour
  • 2 teaspoons Nutmeg
  • 1 Granulated Sugar
  • 1/2 Baking Powder
  • 1 Salt
  • 1 cup Butter
  • 1 Egg
  • 1 1/4 cups Black Currants
  • 1/2 cup Milk

Directions

  1. Beat the egg alongside milk.  Add currants to mixture.  Sift all other dry ingredients together.  
  2. Work butter into flour and mix until mealy.  Pour milk and currants over flour and butter mixture.  Mix well.
  3. Wrap in wax paper and chill for at least one hour.
  4. Roll it 3/8th of an inch thick and cut into pieces with cookie cutter
  5. Cook on a pancake griddle at 325 degrees, greased with oil.
  6. Cook on both sides, flipping when shiny.
  7. Roll in granulated sugar and let cool.
