These chips will not only hit the spot, they’ll add some extra veggies to your diet too.
Let’s make Garlic Parmesan Zucchini Chips!
Preheat your oven to 450ºF.
Take 2 to 3 zucchinis.
Cut off top and bottom of zucchinis and slice zucchinis into 1/2 to 1/4 inch slices.
In a large bowl, mix together 2 cups bread crumbs, 3/4 cup parmesan cheese, 1/2 teaspoon salt, 1 teaspoon pepper, 1 tablespoon garlic powder, 1/3 cup fresh chopped basil, and 1 and 1/2 teaspoons red pepper flakes.
In a small bowl, whisk together 2 eggs.
Take a zucchini slice and dip it in egg wash, then coat it in bread crumb mix.
Coat all sides and pat the mixture onto both sides.
Repeat for all slices.
Transfer slices onto a large baking sheet.
Bake in oven for 15 to20 minutes or until chips are golden brown.

Now for the sauce:
In a small bowl, mix together 1/3 cup mayonnaise, 1 tablespoon lemon juice, 1/2 teaspoon salt, 1 teaspoon pepper, and 1 tablespoon garlic powder.
Then you’re ready to dip chips, eat and enjoy!
