Let’s face it, we all love pizza.
But sometimes it would be nice if it could be made a little bit healthier.
Now we’ve found the answer!
Let’s make cheesy eggplant pizza…
Preheat your oven to 350°F.
Take 1 large globe eggplant and slice it into 1/2 inch pieces.
Salt the slices and leave them to “sweat” for 20 minutes. Afterwards wipe them off to reduce the moisture.
Slather each slice with olive oil.
Bake for 25 minutes.
In a medium bowl, combine all 1 jar marinara sauce, 1/2 cup grated parmesan cheese, 1/4 cup fresh basil, 1 tablespoon garlic powder, 1 teaspoon salt, 1 teaspoon pepper, and 1/2 teaspoon red pepper flake. Stir until combined.
Remove eggplant slices from the oven and pour about 2 tablespoons of the sauce mixture onto each one.
Combine 2 cups shredded mozzarella cheese and 1 cup shredded cheddar cheese. Sprinkle cheese mixture on each slice.
Put the slices back in the oven for 1 to 2 minutes to melt the cheese.
