7 Sweet + Frosty Treats to Celebrate Summer Solstice

When my now six year-old was just a little thing, I decided on a whim to start a fun summer solistice tradition with her - making homemade ice cream!

Ok, actually, when she was super tiny we started by making frozen banana ice cream quite similar to our beloved banana split smoothie bowl recipe.

Regardless, the tradition has continued and this year it will continue again. Come evening, the food processor will come out and the joy shall commence.

Maybe it's living in a sun-starved region of the farthest northern reaches of Upstate New York or perhaps it's my lifelong pursuit of child-like glee.

Whatever the exact motivation, taking a few moments each year to bask in the sunshine and to celebrate the longest day of daylight makes me the happiest.

I'm a believer it's a tradition we should all adopt so I submit, for your consideration, seven sweet treats worthy of the simplest yet happiest of summer solstice celebrations.

1. Boozy Nutella Popsicles Recipe

Mind you, these boozy Nutella popsicles aren't for the kids (at least not without first scraping the bourbon), but I think they're very worthy of toasting the summer solstice in frozen pop form for the adults. Not all of us have kids, after all! And for those of us who do, there's no shame in making the kids a different treat entirely because these grown-up popsicles are delicious.

2. Cookie Dough Banana Ice Cream Bars Recipe

These cookie dough banana ice cream bars are not just worthy of a pint-sized summer solstice celebration for two or a few. No, these simple yet delicious ice cream bars are worthy of making on repeat all summer long. Banana ice cream studded with chocolate chips is sandwiched between a date and cashew crust and a layer of rich, dark chocolate. Trust me on this one! These are summer gold.

3. Salted Caramel Milkshake Recipe

If you have zero prep time, but you want to enjoy the most epic of all sweet and frosty treats, I'm going to push this salted caramel milkshake recipe on you real quickly! They're really easy to make with just four ingredients - or five if you count the whipped cream on top. (And one should never, ever skip the whipped cream on top.) Use as much or as little caramel as you prefer, but make sure to make these milkshakes pronto.

4. No Churn Roasted Berry Vanilla Bean Ice Cream Recipe

I'm a little obsessed with a no-churn ice cream recipe and this vanilla bean ice cream recipe is no exception. It's creamy, loaded with delicate vanilla flavor and perfect for all kinds of toppings. That said, the roasted berries swirled throughout the vanilla ice cream and then poured over top are the true of the star show here. Nothing, and I mean nothing, tastes more like summer.

5. Gingersnap Turtle Icebox Cake Recipe

I love love love a classic icebox cake recipe. There's something so simple, yet vintage about an icebox cake that it instantly feels nostalgic to me. And believe me when I say - gingersnaps aren't just for the winter! Neither is the decadent turtle topping made with pecans, hot fudge, caramel and crushed gingersnaps. Run, don't walk. You want this icebox cake in your life!

6. Homemade Peanut Butter Ice Cream Recipe

There are few things we love in this house more than ice cream, if I'm being completely honest. We are a family of ice cream lovers! That said, peanut butter could probably give ice cream a run for its money for MVP. Enter this homemade peanut butter ice cream recipe - the most perfect pairing of all dessert pairings. With a crunchy, mousse-like texture, we suggest eating it from a homemade chocolate cone.

7. Banana Ice Cream with Cookie Dough Recipe

A sweet ode to my very first summer solstice celebration with my little girl, I couldn't resist sharing this banana ice cream with cookie dough recipe! Frozen bananas make the BEST ice cream...even if it's so-called "nice cream" and not exactly ice cream at all. I keep frozen bananas on hand all summer making it quick and easy to make whenever we want! (Which, for the record, is often.)
