7 Favorite Chicken Recipes That Are Anything But Average

Ryan Nadolny | Ryan Eats Everything

In the 2021, Americans consumed, on average, a staggering 98 pounds of chicken per person according to the National Chicken Council.

Did you even know there's a National Chicken Council? I had no idea! At 98 pounds per person, you're talking nearly 33 whole chickens a year per person!

Chicken, talons down, is the most versatile meat, making it hugely popular. Alone it can be bland, but it happily accepts sauces, spices, and marinades.

Whether you are frying up a whole bird, grilling chicken for a summer salad, or making your famous chicken pot pies, there is simply nothing foul about fowl.

Instead of the same ol' same ol' boring recipes, I'm sharing some of my favorite chicken recipes that are creative, unique and surprisingly simple to make.

After all, if you’re going to eat nearly 100 pounds of chicken a year, you’re going to want some variety while you're doing so!

1. Easy Chili Marmalade Chicken Recipe

This dish comes together in just a few minutes before being tossed in the oven to work its magic. In the meantime, I like to whip up some white rice and steamed veggies to serve alongside this tasty chili marmalade chicken recipe. The chicken is tender with bright sweet flavors and just a tinge of spice. If you like it hotter, add some chili flakes or even a thinly sliced jalapeño.

2. Thai Pineapple Chicken Curry with Coconut Milk

Whoever said that eating healthy was boring, certainly wasn’t looking hard enough. This recipe for our Thai pineapple chicken curry is proof! Great for a quick weeknight dish that is packed with multiple levels of flavor and texture, you can cut your prep and cooking time down even more by using bagged cauliflower rice instead of grating your own.

3. Chicken Tikka Masala Sloppy Joes Recipe

Chicken tikka masala is a flavor bomb of goodness. It's one of my favorite dishes! As a sandwich enthusiast, I immediately knew this chicken tikka masala sloppy joe recipe was a winner. All the same great taste, but with all the fun of a sandwich. Your kids will most certainly appreciate your efforts! *Dramatic eye roll* You can also kick it up a notch with a little dash of peri-peri hot sauce!

4. Greek Yogurt Chicken Recipe

I am absolutely obsessed with everything Greek cuisine. It’s so fresh and so tasty, I could eat it nearly every day. This chicken recipe is no exception. Our Greek yogurt chicken packs big bright flavors, it's visually gorgeous, and it's easy to make. The only thing I change from time to time is the cheese - instead of parmesan, I go with crumbled feta!

5. Jerk Chicken Mango Avocado Sliders Recipe

Our jerk chicken mango avocado sliders are like no chicken recipe you've ever tried. These little sandwiches taste like a trip to the tropics! The slight spiciness is quickly tamed by the creaminess of the avocado and the sweet, tanginess of the mango. This is a prime example of the perfect blend of complementing flavors working together to make your mouth water between each bite!

6. Charred Caesar Salad Avocado Tacos Recipe

Charred Caesar salad avocado tacos? Not your average chicken tacos. Yes, you are going to grill your lettuce. Forget everything you’ve learned and just trust me on this one, ok? It’s ridiculously amazing! I have a love hate relationship with croutons. (As in, I love to hate them.) Admittedly, they go very well with these tacos, adding the perfect crunch and all the Caesar salad vibes.

7. Chicken Fajita Salad Recipe

I don’t have to tell you how amazing fajitas are. Anything served build-your-own taco form is a yes from me. In fact, there will never be a time in which I turn down fajitas. Never. So, what's not to love about this chicken fajita salad recipe?! A hearty salad topped with grilled chicken, peppers, onion, avocados, and salsa vinaigrette dressing, this is definitely not your average salad.
