Cinco de Mayo is an annual celebration honoring Mexico's victory over the French at the Battle of Puebla in 1862.
But in the United States in recent years, the fifth of May has become a day to salute all facets of Mexican culture — an occasion on which we pay tribute to the music, decor, and — of course — the food of America's neighbor to the South.
In fact, these days, Cinco de Mayo is more widely celebrated in the U.S. than in Mexico. Yes, the history of the holiday that's sometimes erroneously described as "Mexican Independence Day" is far more complex than it initially seems.
And so is the cuisine of a country that's often unfairly pigeonholed as the land of nachos, tacos, and burritos. It's much richer and deeper than that.
So if you're looking to celebrate the rich and varied culture of Mexico in a more genuine fashion this year, try out some of the recipes below.
A Short Rib Mexican Skillet Pie is my kind of comfort food combination. Flavorful chipotle short ribs are made in the electric pressure cooker, then use in a layered skillet of ooey gooey spicy perfection. It’s rich, bold, and downright warming!
Instant Pot Crispy Carnitas Tostadas are crispy, crunchy fried tortillas topped with savory pork, red onion, avocado, cheese, hot sauce, and more. They make for a tasty main dish, but also as a hearty snack or appetizer!
Grilled Chipotle Lime Flank Steak with Creamy Avocado Salsa is a spicy, bright, and tangy take on your favorite grilled meat, just in time for summer. The heat and savory flavors of the steak with the bright, tangy salsa are ideal for eating on their own or even in tacos.
And no Cinco de Mayo celebration is complete with a delicious margarita. This tropical twist on the classic is super refreshing and uses delicious seasonal mangoes.
