- 2 medium Pears, ripe
- 1 teaspoon Vanilla Bean Paste, or 1 vanilla bean
- 1 ounce Simple Syrup
- 1/2 ounce Lemon Juice
- 4 ounces Gin
- Club Soda
Peel and core the pears and place in your blender to puree.
Divide the pear puree between two old fashioned glasses (about 2 ounces of puree in each).
Add 1/2 teaspoon of vanilla bean paste or cut the vanilla bean in half and scrape the seeds placing 1/2 vanilla bean seeds in each glass.
Add the simply syrup, lemon juice and gin and stir to combine.
Fill the glasses with ice and top with club soda before serving.
