Toasted Coconut Cream Tarts Recipe

For the Pastry:
  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 4 tablespoons Butter
For the Coconut Cream:
  • 1 cup Heavy Cream
  • 1/2 cup Granulated Sugar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Nutmeg
  • 2 Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Shredded Coconut


For the Pastry:

  1. Preheat oven to 400°F.
  2. In a food processor, blend together flour, sugar, and butter until it becomes soft crumbs.
  3. Gently press into tart or biscuit molds that have been pre-greased.
  4. Bake for 20 minutes or until crusts are golden brown. Let cool.

For the Filling:

  1. Whisk together cream, sugar, salt, nutmeg, eggs, and vanilla.
  2. Evenly divide coconut into tart shells.
  3. Pour mixture over coconut until they are just covered, not too full.
  4. Bake for 30 minutes or until a knife comes out clean in the center.
  5. Let cool and serve warm or store in the fridge to serve chilled later.
