Steak & Mushroom Appetizer Skewers Recipe

Ingredients

  • 8 tablespoons Butter, Divided
  • 16 ounces Cremini Mushrooms
  • 1 12 Ounce Bottle of Dark Beer, Use your favorite, like Black Butte Porter
  • 1 1/4 pounds Sirloin Steak
  • Salt and Pepper, To taste
  • Garlic Salt, To taste
  • Blue Cheese, For topping

Directions

  1. Preheat a large stovetop pan on medium heat. From settings 1-10, I use 6.
  2. Also preheat your oven to 350°F.
  3. Melt 6 tablespoons of butter, then add the mushrooms, stirring to coat with butter.
  4. Cook mushrooms for 10 minutes uncovered.
  5. While the mushrooms are cooking, preheat a stovetop pan that is also oven-safe for the steak. Use the same heat setting as the mushroom pan.
  6. Season both sides of the steak with salt, a tiny bit of pepper and a little garlic salt.
  7. After the pan is preheated, add the remaining 2 tablespoons of butter, then cook the steak for 3 minutes each side.
  8. Next it's time to transfer the steak to the oven and bake it for about 20-25 minutes or until steak is cooked according to your preference. The steaks I usually buy for these skewers are one inch thick and 20 minutes will produce a rare to medium rare steak.
  9. After the mushrooms have cooked in the butter for 10 minutes, it's time to pour in the beer.
  10. Stir and cook for 30-35 minutes, still uncovered, or until sauce begins to thicken. It will reduce and make a sauce to coat the mushrooms.
  11. Remove the pan from the heat.
  12. Once the steak is finished, let it rest for 5-10 minutes.
  13. Transfer the steak to a cutting board and cut steak into cubes.
  14. Add the cubed steak to the mushroom pan and stir together, coating in the remaining sauce.
  15. Assemble your skewers, arrange on a serving tray and top with crumbled blue cheese.
  16. Make more skewers, approximately 60, and smaller portions by pairing one piece of steak with one piece of mushroom. For less skewers arrange two pieces of steak and two mushrooms per skewer, making about 30.

Notes

  • Leave small mushrooms whole, medium mushrooms cut in half and large cut in quarters.
