Spicy Ginger Rum Cocktail Recipe

Ingredients

For the Ginger Syrup:
  • 1 cup Fresh Ginger, Peeled and thinly sliced
  • 1 cup Dark Brown Sugar
  • 1 cup Water
For the Cocktail:
  • 3 ounces Dark Spiced Rum
  • 1 ounce Ginger Syrup
  • 1 wedges Lime Wedge
  • Sparkling Seltzer Water

Directions

 For the Ginger Syrup:

  1. Add all ingredients to a saucepan and simmer for about 35 minutes until the sugar is dissolved and the mixture is syrupy in texture.
  2. Strain out ginger slices and let syrup cool to room temperature. Store leftover syrup in a bottle in the fridge.

For the Cocktail:

  1. Add ice to a short cocktail glass.
  2. Pour in rum, ginger syrup and squeeze of lime.
  3. Top with seltzer water and stir to combine.
  4. Garnish with lime and, if saved, leftover ginger slices.

Notes

  • Will last for at least 2 weeks in the fridge.
  • You can save the ginger from the syrup if desired. It is lovely in cocktails.
