Roasted Squab

Ingredients

  • 1 Squab
  • 3 tablespoons Olive Oil
  • Salt and Pepper, to taste

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Wash the entire bird, ensuring the inner cavity is well cleaned. Pat dry.
  3. Over medium heat, heat oil in a heavy pan.
  4. Season the squab with salt and pepper.
  5. Place the squab breast-side down into the oil, turning to sear on all sides.
  6. Place the squab, breast side up, into a roasting pan and roast for about 10-12 minutes. Halfway through, baste the bird.
  7. Allow the squab to rest for 5 minutes before serving.
