Red, White, and Blue Whoopee Pies Recipe

Ingredients

For the Cookies:
  • 1 box Pillsbury Spring Funfetti Cake Mix
  • 1/3 cup Water
  • 1/2 cup Vegetable Oil
  • 3 large Eggs
  • Red Food Coloring
  • Blue Food Coloring
For the Frosting:
  • 5 large Egg Whites
  • 1 1/2 cups Granulated Sugar
  • 1 teaspoon Pure Vanilla Extract

Directions

For the Cookies:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Mix cake mix, eggs, water and oil in a large mixing bowl on medium speed until fully combined. Divide batter in half. Color half of the batter red and the other half blue.
  3. Drop batter using a small cookie scoop on prepared baking sheet and bake for about 6-8 minutes or until tops spring back when lightly touched.
  4. Remove to a wire baking sheet to cool.

For the Frosting:

  1. In a large CLEAN (grease free) metal mixing bowl, whisk egg whites and sugar over a pot of simmering water. Continue simmering the water and whisking the mixture until the sugar melts and it forms a smooth syrup, about 5 -7 minutes.
  2. Once you have a thick, smooth syrup, remove from heat and place bowl on your mixer. Using the whisk attachment, beat on low speed for 5 minutes. Add your vanilla and increase mixer speed to high and beat for five minutes more. The frosting should form stiff peaks.
  3. Using a spoon or a reseal-able bag with the corner snipped off, place a pile of frosting on the flat side of each red cookie. Top with the flat side of a blue cookie. 

Notes

  • Whoopee pies are best served the same day.
