- 3 cups Cooked Quinoa
- 1 cup Cucumber, Cut in half lengthwise, then sliced
- 1 cup Red Bell Pepper, Diced
- 1/2 cup Red Onion
- 1/2 cup Kalamata Olives
- 1/4 cup Fresh Parsley, Chopped
- Feta Cheese, Coarsely crumbled
- 1/2 cup Homemade Vinaigrette Dressing
In a bowl mix all the ingredients together (from the cooked quinoa all the way to the feta). Pour the vinaigrette over salad.
Taste to adjust seasoning. Enjoy!
