Preheat the oven to 350°F. Lightly spray a 12 cup muffin tin with non-stick spray and set aside.
Divide the prepared pizza dough into 12 pieces, and then cut each of those 12 pieces into 6 small balls.
Place 3 small dough pieces into the bottom of each of the muffin cups.
Top with 1 teaspoon pizza sauce, 2-3 pieces of pepperoni, and 1-2 tablespoons shredded cheese.
Repeat with another three balls of pizza dough, sauce, pepperoni and top with more cheese.
Cover with a clean tea towel and allow the pizza dough to puff up slightly, about 15-20 minutes. Bake for 20-25 minutes or until the cheese is bubbling and the pizza dough is lightly browned and cooked through.
Let the muffins cool for about 5 minutes in the muffin tin, and then carefully remove them to a wire rack. Serve warm.
For the pepperoni, I used 2 small turkey pepperoni sticks, sliced into small rounds. I’m sure another kind of pepperoni would be just as fantastic though!
Once these are baked, they can also be frozen in an airtight container or ziplock bag for up to three months.
