Paleo Salmon Tacos with Pineapple Salsa Recipe

Ingredients

For the Pineapple Salsa:
  • 1 cup Pineapple, finely diced
  • 1/4 cup Red Onion, finely diced
  • 1/4 cup Fresh Cilantro, finely chopped
  • 1 jalapeños Jalapeño, stem and seeds removed, finely minced
  • 1 tablespoon Lime Juice
  • Salt, to taste
For the Tacos :
  • 1 pound Salmon
  • 1 tablespoon Coconut Oil, melted
  • 1 tablespoon Fresh Lime Juice
  • 1/2 teaspoon Chili Powder
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Onion Powder
  • 1/4 teaspoon Garlic Powder
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • Jicama Tortillas, or peel and thinly slice jicama
  • 1 Avocado, diced
  • Chopped Cilantro, optional, for serving

Directions

To Make the Pineapple Salsa:

  1. Stir together all ingredients and store in the fridge until ready to serve.

To Make the Tacos:

  1. Combine coconut oil, fresh lime juice, chili powder, cumin, onion powder, garlic powder, paprika, salt, and black pepper. Generously coat both sides of salmon.
  2. Heat cast iron skillet over medium-high heat and brush with a tiny bit of coconut oil.
  3. Cook salmon for 5 minutes, flip, and cook another 5 minutes or until cooked through.
  4. To assemble tacos, place a bit of salmon on each tortilla and top with avocado, pineapple salsa, and cilantro.
