Preheat oven to 350°F. Line a rimmed baking sheet with parchment paper.
Fry 2 slices of bacon until crisp. Crumble and place in a mixing bowl. Reserve the bacon fat!
To the mixing bowl, add ground beef, almond flour, onion, garlic, eggs, salt and pepper, and the bacon fat. Mix until everything is combined but be careful not to overmix!
Transfer mixture to the baking sheet and shape into a loaf form. Top with remaining 4 slices of bacon. Cook in preheated oven for 1 hour, or until cooked through. Let rest for about 10 minutes before slicing and serving.
