- 3 Ripe Bananas, Mashed
- 3 Eggs, Whisked
- 1/4 cup Pure Maple Syrup
- 1 teaspoon Pure Vanilla Extract
- 1/2 cup Sunflower Seed Butter, Creamy
- 1/4 cup Coconut Flour
- 1/4 teaspoon Cinnamon
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 1/2 cup Chopped Pecans
- 1/2 cup Semisweet Chocolate Chips, High quality
Preheat oven to 350°F. Line 18 muffin cups with paper liners or spray with a coconut oil spray.
Beat bananas and eggs together until fluffy. Beat in maple syrup, vanilla, and sunflower butter; mix well.
Add in coconut flour, cinnamon, baking soda, baking powder, and salt; beat until just combined.
Fold in pecans and chocolate chips.
Fill muffin cups about 3/4 full.
Bake for 20 - 22 minutes, rotating muffin tins halfway through.
Cool completely before serving.
