Mini Pumpkin & Chocolate Chip Cakes Recipe

Ingredients

  • 1 cup Pumpkin Puree
  • 1/4 cup Coconut Oil, Melted
  • 1/2 cup Coconut Sugar
  • 2 Eggs
  • 1/2 cup Semisweet Chocolate Chips
  • 1/2 cup Coconut Flour
  • 1/2 teaspoon Baking Powder

Directions

  1. Preheat oven to 350°F.
  2. Combine the pumpkin, melted coconut oil, coconut sugar, eggs and chocolate chips in a bowl and mix well.
  3. Stir in the coconut flour and baking powder.
  4. Pour mixture into mini 4-inch cake pans.
  5. Bake for 20 minutes.
  6. Let cool and enjoy!
