Mango Chicken

Ingredients

  • 6 servings Boneless Skinless Chicken Thighs
  • 1 cup Long Grain White Rice
  • 1 serving Mango Salsa, (16 oz jar)
  • Salt and Pepper
  • 2 tablespoons Olive Oils

Directions

  1. Season chicken thighs with salt and pepper on both sides (if using skin-on thighs, prick the skins with a fork). 
  2. Place a large skillet over medium-high heat and add two tablespoons of oil. Once the oil is rippling, sear the thighs on both sides, about 2-3 minutes per side. Transfer the thighs to a separate plate.
  3. Add the rice, 1 1/2 cups of water and one cup of mango salsa to the skillet and stir well, Bring to the boil; once boiling, add the chicken on top of the rice and reduce heat to a simmer. 
  4. Cover the skillet and cook until the chicken and rice are cooked through, about 17-20 minutes. 
  5. Plate up and garnish with extra mango salsa.
