Lighter Chicken Salad Recipe - Food Fanatic

Ingredients

  • 1 Rotisserie Chicken, shredded
  • 1/2 cup Light Mayonnaise
  • 2 tablespoons Plain Greek Yogurt
  • 2 packets Stevia, 1 teaspoon
  • 2 teaspoons Lemon Pepper
  • 1/4 cup Dried Cranberries
  • 2 stalks Celery, finely diced

Directions

  1. In a large bowl, combine shredded chicken, mayonnaise, yogurt, stevia, lemon pepper seasoning, cranberries, and celery until everything is well coated and combined.
  2. Cover and chill for at least 2 hours to allow flavors to mingle.
  3. Serve on lettuce leaves, bread, or with bagel chips.
