How to Make Limoncello

Ingredients

  • 4 large Lemons, organic (if using smaller citrus fruits, increase the quantity)
  • 3 cups Vodka, or use another strong alcohol with little flavor
  • 2 1/2 cups Granulated Sugar
  • 2 1/2 cups Water

Directions

  1. Pour your alcohol of choice into a large, clean jar.
  2. Thoroughly wash the lemons (or citrus fruits of your choice) and remove the zest, carefully scraping away any white pith.
  3. Place the pieces of lemon zest into the alcohol, then seal the jar. 
  4. Allow the mixture to rest in a cool, dark place for several hours (at an absolute minimum) but preferably for a few days and ideally up to a week.
  5. When you are ready to bottle your limoncello, prepare the sugar syrup by heating the sugar and water together in a saucepan, stirring constantly, until the sugar has melted. Allow to cool.
  6. Line a funnel with a coffee filter and strain the alcohol into bottles, leaving space for the sugar syrup.
  7. Add a little sugar syrup. mix, then taste. Keep adding the syrup - a little at a time - until you reach the level of sweetness you prefer.
