Homemade Strawberry Waffles Recipe

Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking Soda
  • 1/4 cup Granulated Sugar
  • 2 Eggs, whisked
  • 1 1/2 cups Half & Half
  • 1/4 cup Butter, melted
  • 1 teaspoon Lemon Extract
  • 1 cup Diced Strawberries
  • 1/2 cup Heavy Whipping Cream
  • 1/4 cup Lemon Curd
For Garnish:
  • Powdered Sugar

Directions

  1. Preheat your waffle iron.
  2. Stir together the flour, salt, baking soda, and sugar.
  3. Whisk together the eggs, half and half, butter, and extract.
  4. Create a well in the center of the dry ingredients and pour in the egg mixture. Use a fork to stir everything together. Do not over mix the batter.
  5. Stir in the diced strawberries gently.
  6. Spray the waffle iron with nonstick spray and drop large spoonfuls of batter onto the heated iron. Cook the batter for 4 minutes or until the waffles are golden brown. Remove from the waffle iron with a fork.
  7. Place a metal mixing bowl and metal whisk attachment in the freezer for 10 minutes. Pour in the heavy whipping cream and beat on high the mixture starts to thicken. Add the lemon curd and continue to beat on high until soft peaks form.
  8. Serve the warm waffles with lemon cream, fresh strawberries, and powdered sugar.
